Oaty Cookies + Cream Ice Cream Sandwiches ?✨? These taste sooooo freaking delicious. These are honestly so simple to make and make the best vegan treat! Absolutely loving the new vegan @tillysguiltfree Cookie Cream Crumble Ice Cream flavour now available at Woolies! Honestly you gotta try it! It’s oat milk based, so the ice cream works perfectly with these oaty cookies! Hope you like the recipe xx Recipe: Cookies: Yield: 10 cookies, 5 ice cream sandwiches. Ingredients: 2 tablespoons ground flaxseed 6 tablespoons water 1 1/2 cups rolled oats 1/4 cup desiccated coconut 1/3 cup coconut sugar 1 1/2 teaspoons baking powder 1/4 tsp pink salt 1 teaspoon vanilla extract 2 tbsp melted coconut oil For the ice cream sandwiches: 5 scoops @tillysguiltfree Vegan Cookie Cream Crumble Ice Cream Method: 1. Preheat oven to 170 degrees C and line a baking tray with baking paper. 2. Begin by making your two flax eggs. Combine flaxseed ground and water in a small mixing bowl and stir well together. Set aside for 10-15 minutes or until a glooby consistency is formed. 3. Blitz your rolled oats in a blender or food processor until a flour consistency is reached, around 1 min! 4. Add oat flour to a large mixing bowl and combine with desiccated coconut, coconut sugar, baking powder and salt, stir well together. 5. Add in melted coconut oil, flax eggs and vanilla extract. Using your hands or wooden spoon mix well until a cookie dough is formed. 6. Divide and roll your cookie dough into 10 balls (about two-tablespoon sized portions), place onto your lined baking tray. Flatten each cookie with a fork and cookies should be spaced 5cm apart. 7. Bake in oven for 12-15 minutes, or until lightly golden brown, outsides are crispy and inside is still soft. Allow to cool completely. 8. Form your ice cream sandwiches. Press a scoop of cookie cream ice cream in between two cookies and enjoy immediately or store in the freezer. *ad #tillysdairyfree #icecreamsandwich

CHOCOLATE FILLED PANCAKES // Fluffy pancakes made from oat flour and filled with melty dark chocolate? Yes please! They need nothing more. Just that. Using my @shopsasstainable cutlery set by @stephelswood which is eco-friendly and sustainable and just adds to the charm of the simplicity of this breakfast. {ad} Recipe makes 4 thick pancakes, serves 2 (or 8 normal pancakes) Recipe: 150g rolled oats, ground into a fine flour 1 tbsp maple syrup, add to taste 2 heaped tsp baking powder 1/4 tsp bicarbonate of soda 220ml unsweetened almond milk 1 tbsp apple cider vinegar 4 pieces dark chocolate Toppings: Dark chocolate shavings Method: Whisk all the ingredients except together. Don’t let the batter sit for too long as it will get too thick. Heat a non-stick frying pan on a low-medium heat. Grease the base of the pan with one cal spray or a little coconut oil and lightly grease 4 ring moulds if using. Pour some batter into the ring moulds until halfway up the mould. You can free pour if you don’t have moulds. Place one piece of chocolate in the middle and cover with some more batter. Cover the pan with a fitting lid and let the pancakes cook for 10-12 minutes. When the tops of the pancakes are no longer wet, remove the ring mould and flip them over. Let them cook for another 2-3 minutes. Top with dark chocolate shavings and serve warm.
