Vegan Breakfast Smoothie

Craving something that takes little effort and is incredibly tasty for breakfast? Go no further than the Breakfast Smoothie.  It is an easy start to the day and something I don’t even think about.  Which is a treat in itself.

 

One thing I have found about pursuing this new vegan lifestyle is that it seems to take so much more effort.  I know one day it won’t be the case, but it is still something that irks me. I have always loved food, but it never appeared to take as much effort as it does now. It is something that I seem to constantly think about, and it sometimes feels like being a vegan requires so much more energy.  So when I find something that I enjoy and it has the added bonus of being simple to prepare it quickly becomes a staple of my day.

 

So to add to my list of chickpeas in the cupboard, I always have frozen bananas in the freezer and my ‘chia fresca’ in the fridge.  Every time I go shopping I make sure bananas are on the list. They go right into a ziploc bag and I freeze them.

 

Chia Fresca is just my posh way of saying chia seeds soaked in water. That’s what they call it in Mexico and as I would love to be in Mexico, using ‘Chia Fresca’ makes me feel for a moment that I am. I don’t measure anymore, but probably put about 1/2 cup of chia seeds into a plastic container, add about a cup of water, shake it up and let it sit in the fridge.  The chia seeds absorb the water and become like the consistency of rice pudding. 

 

Breakfast Smoothie:

2 frozen sliced bananas

2 Tablespoons Chia Fresca

Handful of sliced fruit  – go for whatever is in season – strawberries, peaches, watermelon, blueberries

About 1 cup of Almond Milk

 

Place all in a blender – you might have to add extra Almond Milk if it is too thick until it becomes a good consistency. 

Garnish with a sprig of mint and some blueberries!

Voila – you have the start of breakfast in just a few minutes.
